A Xiaolongbao is a type of Chinese steamed bun. The name means “little dragon bag.” It gets its name from the bamboo steaming basket called a Xiaolong.
These buns are best eaten fresh and hot, preferably right after they come out of the bamboo steamer. They’re usually filled with pork and seasoned with garlic, ginger, sesame, and soy sauce.
However, the traditional meat-and-pork stuffing is just the beginning – restaurants all over Shanghai have different ways of seasoning them.
Xidoufen is a spicy Yunnan-style Chinese soup made with boiled peameal and spices such as ginger, crushed garlic, spring onion, coriander, dry chili flakes, and Sichuan pepper oil.
